Welcome back to Haley’s Beauty Room! This past weekend I did one of my favorite summer activities, I went strawberry picking! In the Midwest, this is a must as soon as June hits. The strawberry picking season is so short, that when it comes, you need to jump on it.
I think my boyfriend and I picked about 20 pounds of strawberries! Yes, I know that sounds like a lot (because it is), but I freeze the majority of them and use them all season long in smoothies, desserts, and more.
Of course I needed to make a delicious dessert right away to enjoy the fresh strawberries with. Strawberry Shortcake is so easy and quick that it’s almost a no brainer to make this. Due to the multiple requests I’ve had for this recipe, I am sharing it now. You’ll be surprised how fast you can whip this up!
- 2 tablespoons sugar
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ¼-teaspoon baking soda
- ¾-teaspoon salt
- 1 ½ cups half & half
- 3 cups strawberries
- 5 tablespoons sugar (can be adjusted as necessary)
- 1 ½ cups heavy cream
- 3 tablespoons sugar
- 2 teaspoons vanilla extract
Preheat the oven to 400 degrees Fahrenheit.
Combine the flour, baking powder, baking soda, sugar, and salt in a medium bowl. Add the half- &-half and mix until just combined.
Pour mixture into a greased 8-inch square pan and bake 18-20 minutes, or until golden brown. Remove and cool.
Place a medium saucepan over medium heat. Pour all strawberries into the saucepan and use a masher to crush. I like my sauce chunky, so I lightly mash, you can do it to your liking.
While stirring, add in a tablespoon of sugar, one at a time until fully combined. Once all sugar bas been added, continue to stir and cook until sauce reaches desired consistency. About 5 minutes.
Remove from heat and cool.
Combine heavy cream, sugar, and vanilla in a mixing bowl. Using a mixer, beat the ingredients until soft peaks form.
Once all items are complete, you can serve the shortcake and sauce slightly warm or completely cooled. Cut the shortcake into a desired size, spoon a generous amount of the sauce over the shortcake, and top with a dollop of whip cream. Enjoy immediately.
