Happy Friday loves! In honor of the weekend, I wanted to share my favorite tropical cocktail recipe with you that I have been enjoying all summer long. This recipe actually came about when I was bartending at my parents restaurant.
During slow times I’d like to have fun and try out some mixology. This drink I famously dubbed “Haley’s Escape,” as it tastes like the Caribbean and you feel like you escaped to the beach. I am sure someone else has done this and it is named something else, but I have not come across it yet so we’ll stick with “Haley’s Escape” ;).
This is what you will need to relax and head to the Caribbean…..well mentally anyway:
- 1 oz Coconut Rum
- 1 oz Blue Curaçao
- 2 oz Pineapple Juice
- Splash of Lemon Lime Soda
- Garnish with Fruit (I like maraschino cherries, oranges, and limes)
Stir it up and you will have this beautiful teal cocktail that is sure to get your Summer weekend kicked off right! What is great about this drink is you can substitute the coconut rum if you’re not a fan of coconut with a different rum and it still tastes fabulous. You can also change the portion of each ingredient to make it to your liking, or increase the amount to make a whole pitcher for Ladies Night!
